To the boiling water add rice flour with a couple of good pinches of salt and knead it to form smooth dough. Use a few drops of oil to grease microwave-safe plates and press the dough, a little at a time, through a noodle presser onto the plates. Sprinkle some grated coconut over the "noodles" and cook in a microwave oven for 2-3 minutes on full power. Serve hot with sweetened coconut milk, fish, Chicken or vegetable curries.
