Chinese Fried Rice

Ingredients

7 oz - long grain rice

2 rashers (slices) - smoked bacon

4 oz - frozen peas

2 teaspoons - groundnut oil **

1 teaspoon - salt

2 - eggs

1 x 4oz can - bean sprouts

Directions

  1. Cook the rice in accordance with the instructions on the packet (usually boiled in salted water for about 15-20 minutes). Boil a kettle of water then, when the rice is cooked, drain it in a sieve (strainer) or colander and pour the boiling water over. This removes any excess starch from the rice and stops it sticking. Allow the rice to cool completely.
  2. Finely dice the bacon. Blanch the frozen peas in a pan of boiling water for just two minutes then allow them to drain in a sieve (strainer) or colander. Beat the eggs in a small bowl. Drain the liquid from the bean sprouts.
  3. Heat a large frying pan, add the groundnut oil and wait until it is almost smoking. Add the cooked rice and stir-fry for one minute, then add the bacon, peas and salt. Continue to stir-fry for about five minutes over a high heat. Add the beaten eggs and bean sprouts and continue to stir-fry for a further two minutes or until the eggs have set. Turn the mixture into a warmed dish.
  4. ** Groundnut oil enhances the flavour of any stir-fried food. You can, however, substitute corn oil if necessary.
