Easy Cook Chicken

Ingredients
1 x 3 lb -
oven-ready chicken
1 tablespoon -
butter
4 tablespoons -
corn oil
1 large glass -
water
½ -
chicken stock cube

salt and pepper
1 teaspoon -
dried thyme
1 sprig -
parsley
Directions
- Put the oil and the butter into a heavy casserole dish or large pan and heat until the butter melts. Keeping the heat on high, place the chicken in the pan (dish) and quickly brown it on all sides (this takes about 5 or 6 minutes).
- With the chicken sitting breast upwards, pour a large glass or water into the pan and bring to the boil. Reduce the heat so that the water is gently bubbling then crumble in half a chicken stock cube. Add the thyme, parsley and salt and pepper to taste and cover with a lid. Cook for 45 minutes, checking from time-to-time that there is still sufficient water (add more if necessary).
- After cooking, the chicken is immediately ready for eating. You can spoon some of the liquid from the pan as a 'sauce' to pour over your chicken.
