1¾ lb fresh asparagus

How to Cook Asparagus and Chicken Stir
- Remove any skin from the chicken breasts and cut them into bite-size pieces - about 1" (2.5cm) cubed. Wash the asparagus and trim the ends, then cut on the diagonal into 2" (5cm) long pieces. Peel and finely chop the garlic.
- Place the soy sauce in a bowl, add the sugar and stir until the sugar dissolves. Place a heavy-bottomed frying pan (skillet) or wok on a medium heat and add the sesame oil, add the chopped garlic and fry until it turns pale brown. Add the asparagus and stir-fry for about 3-4 minutes until it is crisp-tender. Add the chicken pieces and continue to stir fry for a further 2-3 minutes until the chicken is cooked. Add the soy-sugar mixture and toss until the asparagus and chicken are well coated. Add salt and freshly ground black pepper to taste. Transfer to a serving bowl and sprinkle sesame seeds over prior to serving.
This dish can be allowed to cool and served as a salad. It works just as well hot or cold. Equally, it can be served in smaller portions as either a snack or a starter.
