2 oz chopped almonds
2 medium cucumbers (or 1 large cucumber)
1 grapefruit
2 oranges
2 avocados
2 tablespoons fresh mint
4 tablespoons fresh chives
1 tablespoon lime or lemon juice
1½ tablespoons honey
1½ tablespoons olive oil

How to Cook Avocado Cucumber and Grapefruit Salad
- Grill the almond flakes in a non-stick pan. Keep turning them and remove from the heat as soon as they begin to turn brown. Set these aside to cool as you prepare the rest of the salad..
- Wash the cucumbers and cut into small cubess about ½" (1cm) square. Zest the grapefruit and one orange, then peel the grapefruit and the oranges and removed the segments making sure that no membrane remains. Place the fruit segments into a bowl along with the roast almonds then chop the mint and chives and add to the bowl. Add in the zest from the grapefruit and orange, then mix well.
- Create the dressing by mixing the vinegar, honey, olive oil, grapefruit and lemon zest together, along with a pinch of salt. Mix well (or whisk) then taste and adjust to your own preference.
- Remove the stones and the skin from the avocados and cut into small dice about ½" (1cm) square. Mix into the salad the drizzle over enough dressing to coat the ingredients. Top with any additional herbs or almonds and serve immediately with warm bread,
Make sure to serve your Avocado Cucumber and Grapefruit Salad straight away. Once the salad dressing has been added, the ingredients will begin to deteriorate.
