4 tablespoons tomato ketchup
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
½ teaspoon chilli powder
1lb 8oz lean minced beef (ground beef)

4 rashers (slices) smoked streaky bacon (side bacon)
4 large eggs
4 sesame seed burger buns
4 thin slices Havarti cheese

How to Cook Bistro Brunch Burger
- Preheat the oven to Mk 1 - 275ºF - 140ºC.
- Mix the ketchup, brown sugar, Worcestershire sauce and chili powder in a small bowl and set aside for later. In a large mixing bowl, using a fork, gently blend the beef with the paprika, 1 teaspoon salt and ½ teaspoon freshly-ground black pepper. On a lightly-floured surface, form the meat into four 5" (12.5cm) patties and set aside.
- While you are preparing the beef, cook the bacon for about 8-10 minutes in a large frying pan (skillet) over medium heat until the fat is rendered and the bacon is crisp. Remove from the pan, drain on a paper-towel-lined plate and cut the rashers in two crosswise. Place in the oven to keep warm.
- Leave about 2 teaspoons of the bacon fat in the frying pan (reserving the extra bacon fat for later use). Heat the pan over medium-high heat and add the burgers, two at a time. Cook for about 4 minutes until nicely browned then flip and cook the other side for 4 minutes until the burger is done.
- Remove the burgers, place on a paper-towel-lined plate or baking sheet and place in the oven to keep warm. Cook the two remaining burgers and also place in the oven to keep warm. While the burgers are cooking, cut the buns in two and lightly toast each side. Also, place these in the oven to keep warm.
- When you have cooked the burgers, wipe out the frying pan with kitchen paper and add 1 tablespoon of the reserved bacon fat to the pan. Heat over a medium-high heat and fry the eggs for about 4 minutes until the whites are set. Season with salt and freshly ground black pepper.
- Build the burgers by placing a hamburger patty on the bottom bun, add a thin slice of Havarti cheese (the heat from the burger will quickly melt this). Add two pieces of bacon (one whole rasher) and top with a fried egg. Spread the top bun with a tablespoon of the spiced ketchup, place on top and serve immediately.
Four minutes each side will give you a medium-rare burger. Extend the cooking time if you prefer your beef more cooked.
