Cauliflower Cheese is one of my own favourites. I find the combination of succulent cauliflower florets and cheese sauce quite irresistible. As you will see, it is simple to prepare and yet, served with a sausage or pork chop, makes a full and satisfying meal.

To serve 4:

1 large cauliflower
2 oz grated Cheddar cheese
FOR THE CHEESE SAUCE:
1 tablespoon butter
1 cup milk
1 heaped tablespoon plain flour (all purpose flour)
  salt and pepper
4 oz Cheddar cheese

How to Cook Cauliflower Cheese

  1. Cut away the main stem of the cauliflower and separate into small florets. Wash before cooking, then cook in boiling, salted water for about 10 minutes. Meanwhile, boil a kettle of water. After 10 minutes, drain the water from the cauliflower and replace with fresh boiling water from the kettle. Add a little salt and cook for a further 8-10 minutes until tender. (Replacing the water during cooking removes that strong 'cauliflower' smell.)
  2. Meanwhile, make the cheese sauce according to our recipe. When the cauliflower is cooked, drain and place the florets into a buttered oven-proof dish. Season them well with salt and freshly-ground pepper and pour the cheese sauce over them. Sprinkle the grated cheese over the top and place the dish under a hot grill for a few minutes to melt the grated cheese. Serve as the cheese begins to brown.
  3. If you don't have a grill, you can place the dish into a preheated oven at Mk 7 - 425ºF - 220ºC for about 10 - 15 minutes
GRAHAM'S HOT TIP:
Wash your cauliflower in water with a little vinegar added. This ensures that any tiny 'inhabitants' that might live between the tightly-formed florets are dislodged.
