Cauliflower Mash with Lemon and Nutmeg is an inspirational new way to make the most of cauliflower in season - even with the soft cheese, it's a great low calorie side dish and if you are anxious to even avoid a small amount of fat, you can substitute Low Fat Soft Cheese (less than 5% fat).

To serve 4:

1 medium cauliflower
1 medium onion
4 oz soft cheese (low fat is okay)
1 lemon
2-3 pinches grated nutmeg
  salt and pepper
2 sprigs thyme (to garnish)

How to Cook Cauliflower Mash with Lemon and Nutmeg

  1. Cut the cauliflower into small florets and peel and chop the onion. Cook the cauliflower and onion together in boiling, lightly salted water for about 12-15 minutes until tender. Drain thoroughly in a colander, then return to the saucepan and mash with a potato masher. This will release more moisture, so reheat gently to evaporate this, stirring so that it doesn't burn.
  2. Meanwhile, grate the zest from the lemon. Add this and the (low fat) soft cheese to the potato-onion mix then stir in the nutmeg (optional). Season with salt and freshly ground black pepper, stir well, then serve garnished with thyme sprigs.
GRAHAM'S HOT TIP:
If you're not too bothered about the dieting aspect, you can gently fry the onions in duck fat instead of boiling them with the potato. The sweetness of the onion adds another dimension of flavour to the dish.
