Cheese and Bacon Toastie

Toasted sandwiches provide a quick and easy method of producing a light meal or a snack. The base often includes cheese which, for any melted cheese recipe, should be a hard cheese like Cheshire, Cheddar, Lancashire or similar. This Cheese and Bacon Toastie uses Crumbly Lancashire but I've used Cheddar or Cheshire before and these work almost as well. What isn't so good (for this particular toastie) is a "stringy" cheese like Emmental. That's just personal opinion, but the rest of the family seem to agree!

To serve 2:

4 oz Crumbly Lancashire cheese
4 rashers (slices) smoked bacon
2 slices bread

PLEASE NOTE: This recipe calls for the GRILLING or BROILING of food. In most countries of the world, the term "grilling" refers to heat coming from above the food source. Significantly, in North America, it signifies heat from below the food (such as barbecuing). In the United States and Canada, when the heat source for grilling comes from above, grilling is termed broiling, and the pan that holds the food is usually called a broiler pan.


How to Cook Cheese and Bacon Toastie

  1. Toast the bread. While it's toasting, grate the cheese and roughly chop the bacon. Spread the cheese onto the toasts and sprinkle the chopped bacon on top. Place under a preheated grill until the cheese is melted and bubbling. Yummy!
GRAHAM'S HOT TIP:
If you inadvertently burn your toast a little, it may not be necessary to throw it away. Toast that has been scraped with a knife often still tastes burned because the burnt crumbs have fallen back into the bread. To avoid this, scrape the toast with the burnt side facing down. The bitter-tasting crumbs will then fall away from and not into the bread.
