Cheese and Egg Toastie

Toasted sandwiches provide a quick and easy method of producing a light meal or a snack. The base often includes cheese which, for any melted cheese recipe, should be a hard cheese like Cheshire, Cheddar, Lancashire or similar.

This Cheese and Egg Toastie uses Cheddar but I've used a good crumbly Lancashire and this works equally as well. What isn't so good (for this particular toastie) is a "stringy" cheese like Emmental. That's just personal opinion, but the rest of the family seem to agree!

To serve 2:

2 oz Cheddar cheese
2 fl oz milk
2 eggs
  salt and pepper
2 slices bread

How to Cook Cheese and Egg Toastie

  1. Grate (shred) or crumble the cheese. Place the milk in a pan, add the cheese then add a pinch of salt and a twist or two of freshly ground pepper. Heat the mixture gently while stirring until the cheese has melted. Beat the eggs and add to the pan. Continue to stir and cook gently for about 3 minutes until the mixture is reasonably firm. Serve on buttered toast.
GRAHAM'S HOT TIP:
If you inadvertently burn your toast a little, it may not be necessary to throw it away. Toast that has been scraped with a knife often still tastes burned because the burnt crumbs have fallen back into the bread. To avoid this, scrape the toast with the burnt side facing down. The bitter-tasting crumbs will then fall away from and not into the bread.
