A fillet of beef is the most luxurious, most delicate (and most expensive) cut available and is usually reserved for special occasions. It may be necessary to order it from your butcher in advance.

To serve 4:

1½ lb fillet of beef (about 2" - 5cm thick)
4 oz shallots
4 oz butter
  salt and pepper

PLEASE NOTE: This recipe calls for the GRILLING or BROILING of food. In most countries of the world, the term "grilling" refers to heat coming from above the food source. Significantly, in North America, it signifies heat from below the food (such as barbecuing). In the United States and Canada, when the heat source for grilling comes from above, grilling is termed broiling, and the pan that holds the food is usually called a broiler pan.


How to Cook Fillet of Beef with Shallots

  1. Peel and finely chop the shallots and place them in a pan with 2-3 tablespoons of water. Cook them slowly until the water has evaporated, then add the butter. Allow the butter to melt (but not cook) and stir into the shallots.
  2. Place the fillet of beef under a preheated moderately hot grill and cook for 7-8 minutes on each side. Place it on a warmed serving dish and cover with the shallots. Et Voila! Extremely simple but extremely succulent. Serve with French fried potatoes.
GRAHAM'S HOT TIP:
Cooking the meat under a moderately hot grill for 7-8 minutes on each side will give you a fillet that is still a little bloody when cut. If you prefer your meat more or less cooked, adjust our grilling time accordingly. If he fillet is less than 2" (5cm) thick, you can reduce the cooking time a little.
