One of the easiest ways to cook fish is to shallow fry it. Here, then, is the most straightforward method... Fish in Breadcrumbs. There are lots of ways to "enhance" this recipe (like a dding a little dry mustard powder to the flour that you use to coat the fish). But the basic recipe is here without any "trimmings".

To serve 4:

4 Fresh fish fillest (haddock, turbot, hake, cod or plaice)
2 tablespoons plain flour (all purpose flour)
4 oz whole wheat breadcrumbs
2 tablespoons chopped parsley
  salt and pepper
1 egg
  oil for frying

How to Cook Fish in Breadcrumbs

  1. Wash the fish fillets and dab them dry on soft kitchen paper. Dip them in the flour to coat them completely. Mix together the breadcrumbs, parsley, salt and freshly ground pepper on a plate or shallow dish. Beat the egg then dip the fillets first into the beaten egg and then into the breadcrumbs mixture so that they are completely coated.
  2. Pour enough oil into a frying pan to cover the bottom to a depth of about ¼" (0.5cm). Heat the oil until you detect a slight haze then place the fish into the pan. Turn the heat down a little and continue to cook for a further 8-10 minutes, turning once half-way through. The finished fish should be crisp and golden-brown.
  3. Serve straight away with French Fried Potatoes or with new potatoes.
GRAHAM'S HOT TIP:
A spoonful of Tartar Sauce as a garnish adds a great tang to this platter.
