To serve 6:
4 lettuce leaves
6 spring onions (a.k.a. scallions or salad onions)
1 lb frozen peas
½ pint water
1 teaspoon lemon juice
1 teaspoon sugar
2 oz butter

How to Cook French Style Peas
- Shred the lettuce leaves and slice the spring onions. Put all the ingredients except the butter into a saucepan. Bring to the boil, then cover and simmer gently for 5-6 minutes. Drain well using a colander and place in a serving dish. Cut or break the butter into small pieces and place on top to melt into the peas. Serve immediately.
Any peas that are uneaten can be reheated the following day by placing them in gently boiling water for just 2 minutes.
