Probably most of us are accustomed to including tomatoes with our salads. A normal tomato, though, can be made much more appealing and interesting with this recipe.

To serve 2 - 3:

2 large firm tomatoes
2 shallots
  vinegar dressing
a few leaves fresh basil

How to Cook Fresh Tomato Salad

  1. Slice the tomatoes and arrange on a plate. Salt the dish to taste. Peel and finely chop the shallot then sprinkle it over the tomato. Pour about half a cup of Vinegar Dressing over the dish and sprinkle with chopped basil leaves to create a fresh summer platter that is equally delicious on its own, with a salad, or as an accompaniment to a barbeque or with a nice steak.
GRAHAM'S HOT TIP:
A little chopped fresh parsley sprinkled over the top will improve both the appearance and the taste.
