How to Cook Fried Tomatoes
- Cut the tomatoes into thick slices (about ¼" - 6-7mm thick). Sprinkle liberally with salt and dust with white pepper (one of the very few occasions that Meester Graham uses white pepper but, for this recipe, it adds a distinct flavour). Warm a smear of oil in a frying pan and add the tomatoes. Cook over a medium heat for about five minutes, turning once, until soft.
Sprinkle additional salt and pepper on the tomatoes after you have turned them in the pan.
