To serve 6:
2 slices white bread
2lb 4oz minced beef (ground beef)
1 large red onion
2 tablespoons tomato ketchup
2 tablespoons brown sauce
1 tablespoon Worcestershire sauce
1 egg
2½ oz grated Parmesan cheese
1 tablespoon oregano
1 tablespoon parsley (chopped)
1 tablespoon milk
sea salt and freshly-ground black pepper
3 - 4 rashers (slices) back bacon (side bacon)

How to Cook Graham's Meatloaf
- Either crumble the bread between your fingers, or give it a few pulses in a food processor to make breadcrumbs. Peel and chop the onion. Finely chop the oregano and parsley. Mix ALL the ingredients (except the bacon) in a large bowl until the mixture lifts away easily from the sides of the bowl and forms a ball.
- Form the mixture into an oblong shape and place in a loaf tin. Lay the strips of bacon over the top and bake in a preheated moderate oven (Mk 4 - 350ºF - 180ºC) for 50-60 minutes until a skewer inserted into the centre comes out clean.
- Serve hot with Stir Fried carrots with Orange and Irish Style Champ or serve cold with Potato and Egg Salad.
If you don't have a loaf tin, don't worry because Meatloaf holds its shape well. Just form the mixture into the shape of a house brick, place it on a baking sheet, and lay the bacon over the top.
