To serve 4:
4 - 6 large fillets cod, bluegill, bass, perch or other firm white flesh fish
1 tablespoon vegetable oil
3 stems coriander
10 curry leaves
FOR THE MARINADE
1 lemon
1 teaspoon chili powder
1 green chili
2 teaspoons coriander powder
2 teaspoons ginger-garlic paste
1 pinch turmeric powder
1 tablespoon vegetable oil

How to Cook Indian Style Fish Fry
- Squeeze the juice from the lemon and blend it with all the other marinade ingredients to make a fine paste. Marinate the fish for a minimum of 30 minutes in a refrigerator making sure each piece is well coated with the marinade.
- Add the oil to a large frying pan (skillet) over a medium heat. Once the oil is hot, fry the marinated fish for about 5 minutes on each side (see chart below). When cooked, remove from the pan onto several thicknesses of absorbent kitchen towel. Finely chop the coriander and curry leaves to garnish and serve hot.

You can also barbecue or grill the fish. This method consumes less oil and is a more healthy healthy alternative.
