Melba Toast is simply very thin toasted bread. Sure, you can buy it in a packet, but home-made looks more rustic and is far less hard on your teeth!

Use Melba Toast with soups or topped off with cheeses or dips to create nibbles of all sorts. They can be made well in advance and kept in an airtight tin.

To serve 6:

6 slices white bread or whole wheat bread

How to Cook Melba Toast

  1. Toast the bread slices on both sides, under the grill or in a toaster. Cut off the crusts then lay the slices flat on a cutting board. Place your hand on top of the bread and, using a serrated bread knife, cut through the bread to split it. (If you are confident enough, you can hold the bread in your hand and rotate it as you slice it.)
  2. For the nicest looking melba toast, cut these thin slices into two or four triangles. Place the bread, toasted side down, under a hot grill and toast the untoasted sides until golden. (The sides will curl up, so keep your eye on them at all times).
GRAHAM'S HOT TIP:
Make sure to remove the crusts and split the bread while it is still warm otherwise it will crumble or break.
