To serve 4:
6 oz whole oats (rolled oats)
1¾ pints water
2 pints milk
2 medium onions
4 cloves garlic
2 medium carrots
1 red bell pepper (capiscum)
2 green chillies
2 tablespoons butter
4 oz green beans
4 oz frozen peas (petits pois)
salt and pepper
coriander leaves (to garnish)

How to Cook Oats Soup
- Soak the oats in the water for 10 minutes to help soften them. Add the milk to the oats and water and place on a medium heat until it boils gently. Remove from the heat and set aside.
- Peel and finely slice the onions, peel and finely chop the garlic and carrots, remove the seeds and finely chop the pepper and chillies. Heat the butter in a pan, add the chopped garlic, chillies and onion and fry gently for 2-3 minutes to soften.
- Add the green beans and sauté gently for 10-15 minutes until they are half cooked. Add the oats mixture and the frozen peas, mix well, season with salt and freshly ground black pepper to taste and cook gently for another 8-10 minutes. Garnish with fresh coriander leaves and serve hot.
Your choice of beans is up to you. Green beans, also known as French beans, string beans, snap beans or squeaky beans, are probably the best choice, but you can equally use finely sliced runner beans. (If you want to use fresh peas, you can do so, but add them to the pan at the same time as the beans)
