To serve 4:
8 oz pasta shapes
5 oz frozen peas
handful parsley
10 - 15 stems chives
1 lemon
salt and pepper
2 tablespoons olive oil
2 pork sausages
4 rashers (slices) smoked bacon
5 oz frozen peas
handful parsley
10 - 15 stems chives
1 lemon
salt and pepper
2 tablespoons olive oil
2 pork sausages
4 rashers (slices) smoked bacon
How to Cook Pasta, Sausage and Bacon Salad
- Cook the pasta according to the pack (usually 3-4 minutes in boiling water). Add the peas for the final 2 minutes of cooking time. Drain and rinse with cold water to cool, then drain again.
- Chop the parsley and snip the chives into a large mixing bowl. Add the zest and the juice of the lemon to the bowl, then add the olive oil and the cooled pasta and peas, with plenty of salt and freshly ground black pepper and mix well. Cover and chill.
- Grill the sausages and bacon (till crisp) and allow them to cool. When you are ready to serve, break the bacon into small pieces and thinly slice the sausages. Add the sausages to the pasta mix and sprinkle the bacon over the top.
Add a tablespoon of olive oil to the water when cooking the pasta. It stops them sticking together. Also, if you keep the pasta in the fridge, by day 3 you'll need to stir in a little olive oil to loosen the pasta (always add the bacon just before serving)
