Pork Patties With Sweet Chilli And Noodles is a healthy and authentic Asian dish that's far better than a takeaway - and ready in less time. Terrific for a snack or a light lunch. Blue dragon dipping sauce is best if you can get it, but there are plenty of different brands available (the hot ones can sometimes be very hot!)

To serve 4:

6 stalks lemongrass
2 cloves garlic
1 lb minced pork
2 tablespoons fish sauce
  handful fresh coriander
  salt and pepper
2 tablespoons sesame oil
2 teaspoons sugar
8 oz fine rice noodles
8 spring onions (a.k.a. scallions or salad onions)
  sweet chilli dipping sauce

PLEASE NOTE: This recipe calls for the GRILLING or BROILING of food. In most countries of the world, the term "grilling" refers to heat coming from above the food source. Significantly, in North America, it signifies heat from below the food (such as barbecuing). In the United States and Canada, when the heat source for grilling comes from above, grilling is termed broiling, and the pan that holds the food is usually called a broiler pan.


How to Cook Pork Patties With Sweet Chilli And Noodles

  1. Remove the outer layers of the lemongrass, and finely chop the bottom ⅓ of the stalks. Peel and crush (mince) the garlic and finely chop the coriander and spring onions. In a bowl, mix together the pork, garlic, lemongrass, fish sauce and half the coriander. Season with salt and freshly ground black pepper to taste.
  2. Mix well and form into 16 patties. Rub each one with sesame oil and a sprinkling of sugar, then place on a rack in a baking tray. Heat the grill (broiler) and grill the patties for 3 minutes each side until golden brown. Meanwhile cook the rice noodles following pack instructions (usually just a few minutes in boiling water). Drain the warm noodles and serve with the patties, chopped spring onions, remaining coriander and a drizzle of sweet chilli dipping sauce.
GRAHAM'S HOT TIP:
If you want, you can leave out the rice noodles and serve with a coriander & spring onion salad with sweet chilli sauce - it's totally delicious and very easy.
