To serve 4:
1 small to medium red cabbage (about 1lb - 450g)
1 medium onion
1 cooking apple
1 clove garlic
1 tablespoon vinegar
1 tablespoon butter
1 teaspoon brown sugar
1 teaspoon caraway seeds
salt and pepper
4 tablespoons water

How to Cook Red Cabbage
- Shred or chop the cabbage into small strips. Peel and chop the onion. Peel, core, and chop the apple and crush (mince) the garlic. Place all these in a large saucepan and add the vinegar, butter, sugar, caraway seed and salt and freshly-ground pepper to taste.
- Place over a low heat, cover and cook for 5 minutes, shaking the pan occasionally. Add the water, bring to the boil and then simmer gently for 40 minutes. Serve hot.
When cooked, no need to drain or strain - just serve it straight to the plate.
