To serve 4:
1 lb salmon fillet, skinned and boneless

How to Cook Salmon with Lemon Stir Fry
- Cut the salmon into strips about 2.5cm (1") wide and sprinkle 2 teaspoons of salt over them. Set aside for 20 minutes. Meanwhile, peel and shred the ginger (you need to end up with about 1 tablespoon) and finely grate the zest from the lemon. Then peel the lemon and divide into segments.
- Heat a wok or large frying pan over a high heat and add 3 tablespoons of groundnut oil. When the oil is very hot and slightly smoking, reduce the heat to medium and place the salmon strips in the pan. Let them fry undisturbed for about two minutes until browned, then gently turn them over to brown the other side (take care not to break up the fish). Remove with a slotted spoon and place onto kitchen paper to drain.
- Wipe the wok (or pan) clean then reheat and add the remaining oil. Add the grated ginger and stir fry for 20 seconds to brown. Now add the sugar, lemon zest, lemon segments, and season with salt and freshly ground black pepper.
- Stir fry gently for about one minute then carefully return the salmon to the pan. Mix with the lemon for about one minute, then add the sesame oil and stir the mixture well. Using a slotted spoon, arrange the salmon and lemon on a warm serving plate, and take to the table straight away.
