Seasoned Lamb chops are a very tasty variation of the basic Lamb Chop. Serve with Creamed Potatoes or fresh asparagus. It's a wonderful way to enhance the flavour of lamb. Simple cuisine with exceptional results.

To serve 4:

1 tablespoon butter
8 oz button mushrooms
  salt and pepper
9 fl oz tomato juice
2 teaspoons paprika
1 teaspoon Worcestershire sauce
8 lamb chops or lamb cutlets

PLEASE NOTE: This recipe calls for the GRILLING or BROILING of food. In most countries of the world, the term "grilling" refers to heat coming from above the food source. Significantly, in North America, it signifies heat from below the food (such as barbecuing). In the United States and Canada, when the heat source for grilling comes from above, grilling is termed broiling, and the pan that holds the food is usually called a broiler pan.


How to Cook Seasoned Lamb Chops

  1. Melt the butter in a large frying pan, add the mushrooms and sprinkle with salt and freshly ground pepper. Cook for about 3 minutes, stirring regularly. Pour in the tomato juice and Worcestershire sauce and add the paprika. Bring to the boil then reduce the heat and simmer for about 10 minutes.
  2. Meanwhile, place the lamb chops or cutlets on a grill pan (broiler pan), season with salt and freshly ground pepper and grill for 4 or 5 minutes on each side. Place the meat on a serving dish and spoon the mushrooms and sauce over them.
GRAHAM'S HOT TIP:
If serving Seasoned Lamb Chops with a variety of vegetables, use a slotted spoon to take the mushrooms out of the sauce and place these on top of the lamb. Then use the sauce as a rich gravy for the vegetables.
