Bubble and Squeak with Feta Cheese is intended as a light meal to use up left-over food (particularly, in this case, mashed potato, cabbage and butternut squash). Naturally, you can substitute whatever left-overs you have (Brussels sprouts for cabbage, sweet potato for butternut squash etc.)

As kids, we always loved Bubble and Squeak. This version simply adds another dimension to the more usual recipe and also, by baking the patties in the oven instead of frying them, the calorie count is reduced (in fact, on the Weightwatchers scale, each pattie is only 2 ProPoints)..

to serve 4:
1 teaspoon
butter
1 lb
mashed potato
10 oz
cooked butternut squash
4 oz
lightly cooked cabbage
2 oz
feta cheese
 
salt and pepper
1 oz
plain flour

 

How to Cook Bubble and Squeak with Feta Cheese

  1. Lightly grease a baking sheet with the butter. Chop the cabbage and feta cheese then mix together the mashed potato, butternut squash, cabbage and feta cheese and season with a pinch of salt and a couple of twists of freshly-ground black pepper. Use your hands to form the mixture into 8 patties, dusting them with a little flour. Place them on the baking sheet, then chill for at least 15 minutes.
  2. Meanwhile, preheat the oven to moderate (Mk 4 - 350ºF - 180ºC). Bake the patties for 20-25 minutes, until piping hot. Serve 2 patties per person.


Graham GRAHAM'S HOT TIP:
For a more filling meal, serve the patties with poached or scrambled eggs on top.
