Coffee Cup Quiche makes use of the fact that a large coffee cup is the perfect receptacle for a quick meal such as quiche. It takes only a few ingredients and even fewer minutes in the microwave.

eggs
6 tablespoons
milk
 
salt and pepper
1
bagel
3 tablespoons
cream cheese
2 slices
prosciutto or cooked ham
 
fresh thyme leaves or fresh chopped chives
 
Dijon mustard

 

How to Cook Coffee Cup Quiche

  1. Beat the egg and milk together with a fork, adding salt and freshly ground black pepper to taste. Tear the bagel (you can use a similar amount of French bread if preferred) into dime-size pieces (¾" - 2cm). Stir these into the egg and milk mix, add the cream cheese and stir together. Spoon the mix equally into 4 large coffee cups then tear or cut the prosciutto (or cooked ham) into small pieces and sprinkle over the top.
  2. Microwave on high until done (for one single coffee cup, I usually find it takes a fraction over 1 minute. With 4 cups, it's closer to 2 minutes). Garnish with mustard and fresh thyme or chives.


Graham GRAHAM'S HOT TIP:
If you're not a fan of creamed cheese, you can substitute mozzarella if you wish. Almost any light cheese will work.

I would never have believed I could make 4 quiches in 6 minutes, but that's how it panned out! And they're really tasty. I might use smoked salmon instead of prosciutto next time. This recipe is fun and quick and easy and a keeper!
