Though the oranges, dates and nuts in Dates Stuffed with Mascarpone is reminiscent of Christmas, these little beasts are perfect all year round for entertaining, finger buffets or just to snack on from time-to-time.

How to Cook Dates Stuffed with Mascarpone

  1. Make a slit in the side of each date and remove the pit. Grate (shred) the zest from the orange and mix with the mascarpone. Crush the walnuts and add to the mix. Place the mixture in the freezer for 10 minutes to firm a little then place a quenelle of the filling in each date. Keep in the fridge till needed.

Keep back a little of the zest (or make some more) and sprinkle on the top of each date to decorate.

These have become a go-to finger buffet for me. So simple and decadent. The cheese is a perfect counterpoint to the sweet dates, and they look really good.
