An Indian influence of spices makes Okra Bhaji (sometimes known as ladies fingers) quite delicious. Some people prefer to slice their okra lengthways, some cut it into lengths of between ½"-1" (1cm - 2.5cm). It's your choice because it will taste just as good either way!

If you're not familiar with okra, it's known in many English-speaking countries as lady's fingers or gumbo and is a flowering plant in the mallow family. Originating in Africa, the plant is cultivated in tropical, subtropical and warm temperate regions around the world.

2 tablespoons
sunflower oil
½ teaspoon
cumin seeds
½ teaspoon
turmeric

onion

green chili
1 lb
okra
1 teaspoon
sugar

tomatoes

lemon juice
 
salt and pepper

 

How to Cook Okra Bhaji

  1. Peel and finely chop the onion. Slit the chili lengthways. Cut the okra either across or into lengths. Peel and deseed the tomatoes and chop the flesh into small cubes.
  2. Heat the oil in a large frying pan (skillet), add the cumin seeds, turmeric, onion and chili and cook gently until the onion is transparent. Add the okra and sauté for 5-7 minutes until just tender. Add the sugar, tomatoes and lemon juice and simmer for 3-5 minutes. Season to taste with salt and freshly ground pepper.
