How to Cook Potato Croquettes
- Peel the potatoes and follow the recipe for creamed potatoes. Beat the eggs and add about ¾ of the mixture to the potatoes. Season liberally with salt and freshly-ground pepper then stir into a smooth paste. Form the potato into sausage-shaped portions about 1 ½" (4cm) long and about ¾" (2cm) in diameter. Brush these with the remaining egg mixture and roll them in a saucer of breadcrumbs to coat the outside.
- Crush (mince) the garlic, place it in a frying pan with about ½" (1cm) of oil and fry the croquettes until they are crisp and golden-brown. Serve hot.

The garlic is only intended to impart a delicate flavour, so cut the clove down the middle long-ways and remove the central 'germ' (the thin stem that looks like a pale green or translucent vein).
Reviews of Potato Croquettes
![]() Huge hit. My first time making potato croquettes - even though I love ordering them at restaurants - and they turned out great! I made these croquettes out of instant mashed potatoes and they were still delicious. I will admit to one change: I used panko bread crumbs instead of regular bread crumbs since there is more crunch with panko. kylefromtexas (2 reviews) |
