Carrots are an all-round healthy food. They are low in calories, and provide fibre and vitamins. The best way to snack on carrots is to eat carrot sticks, but you can also cut large carrots into slices for dipping. They are often ignored as a colourful and healthy addition to a plate of salad...

How to Cook Raw Carrot Salad

  1. Peel the carrots and grate (shred) them finely. Place them in a mixing bowl with a portion of Lemon Dressing. Mix well, then fill a small cup with the mix and press gently using the cup as a mould. Turn over onto a plate and repeat to make a second helping. Watch as the carrot holds its shape, looking and tasting quite delicious.

Graham GRAHAM'S HOT TIP:
If you want to add a slightly sweet taste, mix 1 tablespoon of sultanas with the grated carrot.

Reviews of Raw Carrot Salad

Rating 4 out of 5 - Many cooks will make this recipe again April 08 2015
I made this recipe the other night. Very picky husband will only eat raw vegetables and only a few of them at that. This was super easy, so fresh! Hubby ate a bowl full. This is showing up at least once a week at my house from now on.
