How to Cook Tasty Turkey Portions
- Remove any turkey skin and rub salt and freshly ground pepper all over the portions. Heat the oil in a frying pan until it is quite hot then add the turkey pieces and quickly fry on all sides to seal the juices. Add the wine to the pan and bring to boiling. Reduce the heat a little so that the liquid simmers quickly (low boil). Cook, turning the turkey occasionally, until all the wine is absorbed (usually about 12-15 minutes). Serve with your choice of vegetables for a fine, tender and tasty turkey supper.

Don't be alarmed if the turkey portions become lightly browned on the outside; the meat on the inside remains white and the taste will be superb.
